A cozy favorite to wait out this storm

Since Friday we have been in the midst of a strong nor’eastern. The winds have been howling, the rain has been falling, and even though it is not that cold, it is definitely stay inside weather. 

On days like this, you just crave comfort foods.  So I whipped up a crock pot full of my delicious chicken chili, seasoned full of flavor with our OBX Poultry Seasoning. You can top it off with sour cream, avocado, cheese, or anything you fancy. (Even a tortilla chip or two!) It hit the spot on this windy, rainy day with plenty of time to snuggle up to a movie during and after. 

Cozy Chicken Chili

4    large boneless chicken breasts
4   15.5 oz. cans of great northern beans drained
2   cans of tomatoes mild
2   cans of corn drained

2   packs of McCormick's white chicken chili seasoning
1   box of chicken broth

1   tablespoon OBX Spice Company, Inc. Poultry Seasoning  
1   chopped sweet onion   
1   chopped yellow pepper

Cover chicken breasts with water and cook until no longer pink (about 20 minutes). Drain chicken, set aside, and let cool. While the chicken is cooking, chop onion and pepper into 1” or less pieces. Set aside. Dice the chicken breasts next, when cool. Mix remaining ingredients in a six quart crock pot and stir until blended. Cook on high for four hours and then low for two hours, mixing a couple of times while cooking.

Garnish your chicken chili with a dash of OXB Spice Company's Poultry Seasoning, sour cream, shredded cheddar cheese, black olives, onions, guacamole, jalapenos, and/or hot sauce.
